Limoncello made in Calabria (South Italy)
Limunì, Limoncello from the south, is obtained by infusing alcohol with peels of untreated lemons, matured under the hot Calabrese sun.
The lemons, from farms located near Distilleria Caffo, are processed the same day as they are harvested. To obtain the Limunì infusion, only the most aromatic part of the fruit is used, i.e. the yellow part of the peel (epicarp) infused in neutral alcohol.
