Strong ale (high fermentation classic method)
Second fermentation followed by remuage, dégorgement and subsequent third fermentation with slow and prolonged maturation at a constant temperature. Elegant golden yellow color, crystal clearness, well structured exuberant foam, fine and persistent perlage. Initially it releases a floral bouquet, then the aroma becomes fruity, of cooked apple, ripe grapes, candied citrus. Balanced body, strong sparkling, balanced taste with pleasant fruity notes. Long, fresh after-taste of hops. Final dry and soft at the same time.
